Our Italian Cookery School is a place to slow down, get your hands dirty and discover the joy of cooking Italian food from scratch.

Designed for guests who want to cook with more confidence, learn something new, or simply spend a few sociable hours around the kitchen table, our classes are practical, relaxed and generous. Led by experienced Italian chefs and cooks, each session brings together traditional recipes, simple techniques and the stories behind the food.

From rolling fresh pasta and shaping ravioli to making the perfect tiramisu, guests learn dishes they can recreate at home, while enjoying the process of cooking, tasting and sharing together. Whether you’re a complete beginner, a keen home cook, or looking for a memorable experience with a partner, friends or family, there’s something for everyone.

Most importantly, it isn’t about being perfect. It’s about good food, good company and the pleasure of making something delicious with your own hands.

Guests leave with new skills, recipes to take home and, hopefully, a little more of the Italian way of cooking — simple ingredients, generous cooking and always a table worth gathering around.

 

Tomato Sauce Lesson

Master the art of authentic Italian salsa di pomodoro from scratch. You’ll learn to balance natural acidity and sweetness using sun-ripened tomatoes, garlic, extra virgin olive oil, and fresh basil, along with slow-simmering techniques to create the ultimate versatile base for classic pasta dishes.

Meatballs Lesson

Master the art of crafting juicy, tender Italian meatballs (polpette) from scratch. You’ll learn to select the ideal meat blend, balance herbs, cheese, and aromatics, and practice hand-shaping before browning and gently simmering them in a rich tomato sauce for maximum flavor.

Italian Ragú Lesson

Discover the secrets behind a slow-simmered, traditional Italian ragù. You’ll build a flavorful soffritto base, select and sear choice meats, deglaze with wine, and master the low-and-slow simmering technique that creates a rich, deeply comforting sauce perfect for tossing with fresh pasta.

Italian Broth (il Brodo) Lesson

Discover the foundational element of traditional Italian cooking: rich, clear brodo. You’ll select and prepare fresh vegetables, meats, and aromatics, learning slow-simmering techniques and skimming methods to create flavorful bases ideal for tortellini, soups, and risottos.

Risotto Lesson

Learn the delicate technique behind crafting the perfect creamy risotto. You’ll cover grain selection (Arborio vs. Carnaroli), toast the rice (tostatura), deglaze with wine, and master the signature mantecatura finish with cold butter and Parmigiano-Reggiano.

We provide everything you need, including fresh ingredients, professional aprons, cookware, and recipe cards to take home. All you need to bring is your enthusiasm and comfortable, closed-toe shoes. At the end of the lesson, you’ll sit down to enjoy the meal you cooked alongside a glass of wine, or take your creations home with you.o.
